Ingredients
1  banana 
3/4 cup milk kefir
1 tablespoon cocoa powder
1/4 cup chia seeds
2 tablespoons heavy whipping cream 

Directions
Blend the banana, milk kefir, cocoa powder and whipping cream for 40 – 60 seconds.
Add chia seeds into the mixture and stir.
Pour mixture into a  container and refrigerate from 6 hours to overnight.

Top with shredded coconut, crumbled cookies, or sliced bananas.

Kefir Eggs with flatbread

Ingredients
4 tsp kefir
Pinch of Greek salt
Pinch of cayenne
1 shallot sliced thin
1 garlic clove sliced thin
4 tablespoons extra virgin Greek olive oil 
2 large eggs preferably organic
Chili oil as desired
2 pieces of oval or round flatbread
2 tablespoons chopped microgreens basil, parsley or chives
1 teaspoon chili flakes

Directions
Whisk together the milk kefir, salt, cayenne and one tablespoon of olive oil, and set aside. You can prepare this a day ahead.

In a small nonstick skillet, lightly cook the shallot and garlic slices for a few minutes over medium heat, to soften. Remove and set aside.
In the same skillet heat two tablespoons of olive oil and crack the eggs one at a time into the skillet, to make two sunny-side up eggs. Cook until the white are firm but the yolks still a little runny.

In a separate skillet, warm the flat bread, brushing each side with a little olive oil.
Place the flat bread on two separate plates, spread half the yogurt mixture over each piece of flatbread and place an egg on top. Drizzle with chili oil and sprinkle with microgreens or chopped chives, parsley or basil, and serve.

1 large egg
3 tablespoons milk kefir
3 teaspoons honey
1 splash vanilla extract
2 slices sandwich bread
1/4 cup berries of choice
2 tablespoons chocolate chips

Directions
Whisk together the egg, yogurt, honey, and vanilla extract in a small bowl.
Whisk until the mixture is completely smooth and doesn’t have any lumps.
Take one slice of your bread and press down the centre leaving a border of crust.
Pour half of the kefir mixture onto the bread, spreading into an even layer.
Spread half of the berries and chocolate chips over the kefir mixture.
Air fry or bake at 350 F for 5-8 minutes.
Keep and eye on it until the bread looks toasted golden brown.

2 eggs
2 tablespoons melted butter
1 1/2 cups flour
1 cup oats
1/4 cup granulated sugar
1 teaspoon vanilla extract
1 teaspoon baking soda
1/4 teaspoon salt
1/4 cup blueberries
Your favourite syrup
Non-stick cooking spray

Directions
Place milk kefir, eggs, melted butter, salt, sugar and vanilla extract, into the blender.
Blend for 5 seconds.
Add flour, baking soda and oats through the lid opening.
Close the lid and blend for an additional 20 to 25 seconds.
Spray the pan with non-stick cooking spray.
Pour 1/8 to 1/4 cup (30-60 ml) batter onto hot, prepared pan.

Garnish your delicious fluffy pancakes with blueberries and syrup. Enjoy!
