Ingredients:

1/2 cup milk kefir
250g cream cheese
1/4 cup + 2 Tbsp powdered sugar
1 Tbsp cornstarch
1/2 tsp vanilla extract
4 strawberries, steamed and cooled
1 1/2 cups graham cracker crumbs
6 Tbsp melted coconut oil
1 Tbsp granulated sugar

Directions To make the crust:

In a medium mixing bowl, stir together the graham cracker crumbs and granulated sugar. Stir in the melted coconut oil until well combined and distributed. Press the mixture into the bottom of a 6-8-inch spring form pan.

To make the filling: Add the kefir, creamcheese, powdered sugar, vanilla, cornstarch and strawberries into the pitcher of a high-powered blender. Blend on high until extremely smooth.

Pour the filling into the spring form pan on top of the crumb crust—cover and place in the freezer for four hours, or overnight.
Before serving, release the spring form pan and allow the cake to thaw for five minutes before cutting. Top with additional strawberries, seeds, or white chocolate chunks to your taste.

CHERRY KEFIR PANNA COTTA

Ingredients:

1-1/2 cups milk kefir
1 Tbsp gelatin
Olive oil
1-1/4 cups heavy cream
1/4 cup fresh cherries
2 Tsp honey
1/2 teaspoon vanilla extract
.75 Cup granulated sugar
1/4 teaspoon ground cinnamon

 

Directions:

Lightly coat a paper towel with olive oil and wipe the entire inside of your bowl. Whisk the cream, honey, and cinnamon into a medium-sized saucepan for a few seconds.

Sprinkle the gelatin over the cream mixture and let it set for about 5 minutes.

Heat and stir the mixture at medium-low heat for 3-4 minutes until the gelatin is dissolved.

Remove from heat and allow to cool for a few minutes. Gently whisk the milk kefir and vanilla into the cooked cream mixture.

Pour the panna cotta into single-serving ramekins (2 to 4 ounces) or small bowls. The smaller they are, the faster they will set up.

Transfer the panna cotta to the fridge for 2 to 4 hours or overnight.

Cherry Topping:

Start by cutting each cherry in half, and remove the pit. Heat the sugar, cherries, and water in a medium saucepan over medium-high heat. Simmer for 10 minutes, reducing heat if mixture starts to boil.

Remove from heat and smash cherries with a potato masher. Allow to cool for 10 minutes, then pour through a mesh strainer into a bowl or cup. Use a large spoon to push as much liquid through the strainer as possible. Store in a sealed container in the refrigerator until ready to use.

Pour some of the cherry syrup over your panna cotta and add a cherry on top for garnish.

COCOA KEFIR COOKIES

130g  flour
1/4 tsp Baking soda
40g dark cocoa powder
1/4 tsp Salt
1 tsp Vanilla extract
60 g Butter
1/2 cup milk kefir
3/4 cup white sugar

Directions:

Sift flour, baking soda and dark cocoa powder. Add salt and sugar and stir. In a second bowl whisk kefir with lukewarm melted butter and vanilla extract.

Add dry ingredients into the kefir mix and stir briefly until all the ingredients are well combined. The dough should be thick and sticky. Cover a baking pan with baking paper and use a tablespoon to make small scoops of the mixture, spacing them well apart on the baking tray.

Bake in a preheated static oven at 180 °C for 10 – 15 minutes. Remove from the oven, allow to cool for 5 minutes and then move them on the cooling rack and let them cool down completely before serving.
